Research Field/Interests
1. Flavor chemistry and flavoring technology. My research focuses on syntheses of flavor compounds and development of flavorings, especially sulfur-containing flavor compounds and meat flavorings.
2. Flavor chemistry of Baijiu and modern technology of Baijiu production.
Major academic achievements
Prof. Sun Baoguo, Doctor of Engineering, Academician of the Chinese Academy of Engineering, an expert in fragrance and food chemistry. He now works as the President of Beijing Technology and Business University (BTBU) and also serves as Vice-Chairman of Chinese Institute of Science and Technology.
As a distinguished expert in flavor chemistry, he has achieved great success in his researches. He created a characteristic molecular structural unit model for sulfur-containing meat flavors and successfully developed a series of manufacturing technologies for many important meat flavors, which underlay the industrial production of key sulfur-containing meat flavors in China, such as 3-furyl sulfides and unsymmetrical disulfides. He proposed the preparation concept for Chinese characteristic meat flavorings, i.e “the identical origin of aroma with raw material”, and developed crucial techniques of preparing meat flavorings based on meat, bone and fat, which established the technological foundation for meat flavoring production in China. He has been devoted to the research on flavor chemistry of Baijiu and proposed the development strategy of Baijiu which emphasizes on the double guidance of health and flavor.
Professor Sun has taken in charge of many research projects, including 5 projects funded by National Natural Science Foundation of China, and 7 projects funded by Ministry of Science and Technology of China, including the well-known National “973 program” and National “863 program”. He has been granted more than 20 invention patents. As the first accomplisher, he has won the Second Prize of National Award for Technology Invention and 4 Second Prizes of National Award for Science and Technology Progress.
